Healthy Sweet Potato Muffins
Moist and sweet muffins without any refined sugar and packed with superfood ingredients!
Peel the skin off the sweet potato and dice the sweet potato into small chunks. Boil for 15 min until the sweet potato is fork tender.
Meanwhile, preheat the oven to 350F and line the muffin tins with muffin liners.
In a large bowl, add the maple syrup and mashed sweet potatoes. Mix well.
Fold in the rest of the ingredients and mix well.
Transfer the batter into the muffin tin.
Bake for 25 min until the muffins are cooked all the way through.
