Berry Energy Bites Recipes

Summer is finally here! One of the things I’m most excited about summer is fresh berries. I’m going to kick off this summer with these 2 berry-inspire recipes in 1 post! I love the fresh tart taste of these berry bites and the flavour is balanced with the natural sweetness from dates. If you are craving something sweet and filling, try a quick berry bites (hehe, a ‘quick bite’, get it  :)?  ) They are the perfect snack on the go, or as a picnic snack-whenever you need a ‘quick bite’ to fuel your day.

 

Berries are tiny antioxidant powerhouses. The are full of flavour but has lower sugar content than many sweet fruits, making them a healthy light snack. I had so much fun incorporating fresh berries into these delicious snack bites, adding more plant-based protein to power your day. Hope you have fun making these easy, delicious snacks as well!

First of all, I want to share why eating berries are so good for you.

 

Blueberries

 

1. Cardiovascular Health

Anthocyanin is the antioxidant that gives fruits and vegetables their purple, red and blue colours. This antioxidant has the affinity to clean up the oxidative damage within our cardiovascular system. I like to think of this beautiful hue as mother’s nature’s way of reminding us to eat these produce to keep our veins and arteries healthy.

 

2. Vision Protection

Smartphones and other technology have made a big part of our lives accessible to us at our fingertips. I admit I’m reliant on my phone, too! More screen time means more eye strain. This is especially concerning for children because their eyes are still developing and are more susceptible to stress. Besides making sure you take breaks, blueberries can protect our vision, especially our highly vascularized retina.

 

3. Brain Health

Our nerve cells consists of fats and it’s very susceptible to oxidative damages, a study  has show 12 weeks of having 1.5-2 cups of fresh blueberries is enough to improve memory and other cognitive functions in a group of elderly participants.

 

4. Blood Sugar Balance

Low GI means it raise your blood sugar slowly and it’s good for blood sugar regulation and these little berries are great snack for craving control

 

 

Raspberries

 

1. Metabolism Booster

If you are familiar with the enticing aroma of raspberries, you have encountered raspberry ketones-these naturally occurring molecules contribute to the unique flavour and aroma of raspberries. Although I don’t recommend buying expensive raspberry ketone supplements for weight loss purpose, I hope you enjoy plenty of fresh raspberries this summer for its potential fat-burning bonus along with other vitamins, minerals and its unique antioxidant profile that help your body feel its best

 

2. Blood Cleanser

Tiliroside found in raspberries has show potential in regulating fats in our bloodstream and raspberries’ low glycemic index value compare to other sweet fruits makes it great for blood sugar balance.

Raspberry Berry Bites

Ingredients

  • 1 cup raspberries

  • 5 dates, soaked overnight

  • 1 tbsp soaking liquid from the dates

  • 1/2 cup coconut flour

  • 1/2 cup almond flour

  • 1 tbsp hemp hearts

  • 2 tsp ground ginger

  • 1 cup unsweetened shredded coconut

Instructions

  1. Blend everything in a food processor except for the shredded coconut

  2. Roll the dough into bite-sized pieces and cover them in shredded coconut

Notes

  • Keep refrigerated in an air-tight container for up to 5 days

  • 1/2 cup coconut flour

  • 1/2 cup almond flour

  • 1 tbsp hemp hearts

  • 1 tsp cardamon

  • 1 tsp cinnamon

  • 1 cup unsweetened shredded coconut

 

Instructions

  1. Blend everything in a food processor except for the shredded coconut

  2. Roll the dough into bite-sized pieces and cover them in shredded coconut

Notes

  • Keep refrigerated in an air-tight container for up to 5 days
