You can whip up a batch of these delicious cookies under 30min. They are crispy on the outside and chewing on the inside.
If you are not convinced yet? Since it's vegan, I often sneak a piece of dough before they go into the oven.
I'm so excited to finally share one of my all time favourite chocolate chip cookie recipe with you!
Why unsweetened shredded coconut?
1. Cookie Texture
You won't get too much coconut-y flavour if you are not a bit fan of coconut. The fine grits make the cookies chewy.
2. Avoid Sugar Crash
Coconut meat is rich in fibre, this will slow down the release of sugar so you won't feel tired after eating a couple of these cookies.
3. 'Bonus Fat'
Coconut meat contains a type of healthy fat, MCT (medium-chain triglycerides), which gets used up as fuel by the body readily.

Of course I know you will share them with your loved ones and enjoy them in moderation. When treating yourself, why not go for something that treats your body with TLC at the same time?
Happy baking :)
