Refreshing Citrus Napa Cabbage Slaw


Happy Saturday! Spending time outdoors has been my favourite thing to do when the weather is nice. Looking at the sprouting new branches and blooming flowers makes me feel so grateful for the spring weather.

This always puts a smile on my face.

Spring time also makes me crave lighter, more refreshing recipes. When it comes to getting in shape for the summer, I like to start from the kitchen. This is because when the body is given the nutrients to support its detoxification systems (eg. our kidneys, liver, and the skin), it naturally lets go of the toxins and excess weight.

Napa Cabbage is a great detoxifying food. This crunchy and slightly sweet cabbage also contains powerful cholesterol-lowering and anti-cancer nutrients. If you are looking for healthy, stress-free dinner ideas, try serving this salad with some quinoa or brown rice for a boost of protein. Hope it will put a smile on your face, too.

 

Citrus Napa Cabbage Slaw

A refreshing salad made with sweet Napa cabbage, crunchy cucumber and juicy orange!

Salad

  • 4 cups Napa cabbage, shredded

  • 1 long English cucumber, sliced

  • 1 large navel orange, diced

  • 1 block (200g) organic smoked tofu, diced

  • 1/3 cup sesame seeds

Dressing

  • 2 tbsp sesame oil

  • 1 tbsp white wine vinegar

  • 1 tbsp soy sauce

  • 1/4 tsp salt

  • 1 green onion, thinly sliced

 

Instructions

  1. Prepare the salad ingredients and toss everything together in a large salad bowl.

  2. Whisk dressing ingredients together and add immediately before serving to keep the salad crunchy.

Notes

  • If you are having leftovers for lunch the next day, keep the dressing in a separate jar to prevent the cabbage from getting soggy.
