Gluten free, refined-sugar free, vegan, one-bowl!? A Cookie recipe can’t get any better than this. Making gingerbread men from scratch is my most missed holiday tradition ever since I gave up gluten due to my severe sensitivity (read more here).

After many trials and errors over the past few years, this is THE RECIPE I want to share with you. Enjoy!
Here’s why you need to add a little bit of ginger into your winter routine:
Immune Boosting Effect
Do you feel warm after consuming ginger? Winter is a good time to eat more ginger daily because a nice sweat can stimulate the sluggish detoxification system during the colder months.
Anti-inflammatory Effect
Joint pain and muscle aches? Clinical studies found regular ginger consumption can effectively reduce pains and discomforts. The potent anti-inflammatory compound named gingerols can also kill of cancer cells which tend to proliferate when the body is in a pro-inflammatory state.
Reduce Bloating
Ginger is known for calming digestive discomforts, especially nausea. Ginger is also one of my essentials for keeping the waistline trim because it minimizes bloating.

Healthiest Gingerbread Men Recipe
Yields 15
Gluten free, refined-sugar free, vegan, one-bowl!? This is the best gingerbread men recipe ever!

Ingredients
1 cup brown rice flour
½ cup coconut flour
½ cup coconut palm sugar
¼ cup apple sauce
¼ cup tahini sauce
¼ cup molasses
1 tsp vanilla extract
2 tsp cinnamon
½ tsp nutmeg
¼ tsp cloves
2 tsp ginger powder (or freshly grated ginger)
⅛ tsp salt
Quick Dry Vegan Icing
2.5 cup icing sugar
2 tbsp coconut oil, melted
¼ cup water
Instructions
Line two cookie sheets with parchment paper. Thoroughly clean your working surface
and line the area with a piece of approximately 15’’ by 15’’ parchment paper for rolling.
Incorporate all ingredients into a mixing bowl. Mix well till dough is formed.
Chill the dough for 30 min in the refrigerator.
Preheat oven to 350F.
Roll out half of the dough on top of the parchment paper to ¼" thickness. Use a cookie cutter to cut out the gingerbread men. Carefully transfer your gingerbread men onto the lined cookie sheets, spacing them ½" apart. Repeat this process until the dough is used up.
Bake the gingerbread men at 350F for 12 min.
Decorate with icing to give them unique characters (optional)

Keep in an air-tight container for up to a week in the fridge.
