PB Applesauce Protein Cookies
Sweetened naturally with applesauce, our protein packed peanut butter is a little indulgence you can feel good about.
½ cup peanut butter
5 tbsp applesauce
⅓ cup coconut flour
⅛ cup coconut sugar
1 tbsp hemp hearts
1 tbsp vanilla protein powder
½ tsp baking soda
¼ tsp vanilla extract
Preheat the oven to 350F. Line a cookie sheet with parchment paper. Layer the lined cookie sheet over another cookie sheet*.
In a mixing bowl, whisk together the peanut butter, applesauce, coconut sugar, vanilla until well-combined.
Fold in the coconut flour, protein powder, baking soda and hemp hearts.
Shape the cookie dough into 12 even-sized balls with your hands and place them evenly onto the cookie sheet. Flatten the cookie dough balls with a fork.
Bake for 8min and cool for 5 min before serve.
Since this recipe contains protein powder, doubling the cookie sheets will prevent the cookies from browning too quickly on the bottom.
