Unlike chocolate truffles, these fig truffles are an excellent source of fibre, which means they release energy slowly and evenly. No blood sugar spikes so you will feel satiated longer.

Cinnamon, nutmeg and ginger are warming spices that protects your digestive system and naturally sweetens.
Dried figs is a source of calcium, potassium and zinc. Hemp hearts supply magnesium and phosphorous. These minerals work together to boost your immune system and stimulate the flow of digestive juices.
Goji berries contain potent antioxidants. They has been used in traditional Chinese medicine as an immune booster for thousands of years. Clinical trials have also studies their anti-inflammatory effect on arthritis due to its high antioxidant content. They are packed with beta-carotene (vitamin A) and Vitamin C.

Ingredients
7 (8 oz. pkg) dried figs
¼ cup almond flour
⅛ cup goji dried berries
⅛ cup hemp hearts
1 tbsp amaranth
1 tsp cinnamon
¼ tsp ginger powder
2 tsp coconut oil
½ tsp vanilla extract
1 cup water (for soaking the figs)
Instructions
Soak the figs in a glass jar overnight (or at least 2 hours).
Drain the figs well.
Add the figs, vanilla and coconut oil to a food processor and blend until you get a smooth paste (Tip: have extra coconut oil left on the measuring spoon? Put it aside to grease your hands later to prevent the paste from sticking to your hands).
Transfer the mixture into large bowl.
Fold the almond flour, spices, goji and hemp hearts, amaranth into the fig mixture and mix well.
Grease your hands with some coconut oil and roll the mixture into bite-size pieces.
Notes
Keep refrigerated in an airtight container for up to 5 days.
