You can whip up a batch of these delicious cookies under 30min. They are crispy on the outside and chewing on the inside.

Why unsweetened shredded coconut?
1. Cookie Texture
You won't get too much coconut-y flavour if you are not a bit fan of coconut. The fine grits make the cookies chewy.
2. Avoid Sugar Crash
Coconut meat is rich in fibre, this will slow down the release of sugar so you won't feel tired after eating a couple of these cookies.
3. 'Bonus Fat'
Coconut meat contains a type of healthy fat, MCT (medium-chain triglycerides), which gets used up as fuel by the body readily.

Best 1 Bowl Vegan Chocolate Chip Cookies
make 12 small cookies

Ingredients
1 cup unsweetened shredded coconut (I love Let's Do Organic b/c it's free from additives )
1 cup almond flour
1/8 tsp salt
1/4 tsp baking powder
1/3 cup chocolate chips (I love Enjoy life vegan mini chips )
1/4 cup maple syrup
1/2 tsp vanilla extract (I love simply organic vanilla)
1/8 cup coconut oil
Instructions
Preheat the oven to 375F. Line a cookie sheet with parchment paper. Grease the paper with a little bit of coconut oil with clean hands.
Combine everything well in a large mixing bowl with clean hands.
Portion the cookie dough into balls and place them onto the cookie sheet with 1 inch apart. Flatten them gently with your hands.
Bake for 15 min.
Cool for a few minutes and enjoy!
