Matcha Energy Bites

This is a great mid-day snack and helps your productivity soar through the roof. Enjoy this simple match energy bites recipe!

Ingredients

  • 3 tbsp coconut flour

  • 2 tsp matcha powder plus

  • (optional)0.5 tsp matcha for covering the energy balls

  • 1 scoop fermented vegan vanilla protein powder

  • 2 tbsp coconut oil, melted

  • 1/4 tsp vanilla extract

  • 6 tsp water

Optional

  • 2 tbsp honey

  • (my protein powder is sweetened with stevia, but if yours is not sweetened, feel free to add some sweetness to it)

 

Instructions

  1. Mix all dry ingredients together: coconut flour, matcha, protein powder.

  2. Add melted coconut oil, vanilla and water to the mixture. Mix well and you will have a mixture resemble the consistency of cookie dough.

  3. Shape the dough into bite-size pieces with your hands.

  4. Optional: Sprinkle some matcha powder to cover the energy balls to prevent them from sticking to each other.

Notes

  • Store in an air-tight container and store up to 5 days.
