Matcha Energy Bites
This is a great mid-day snack and helps your productivity soar through the roof. Enjoy this simple match energy bites recipe!
3 tbsp coconut flour
2 tsp matcha powder plus
(optional)0.5 tsp matcha for covering the energy balls
1 scoop fermented vegan vanilla protein powder
2 tbsp coconut oil, melted
1/4 tsp vanilla extract
6 tsp water
2 tbsp honey
(my protein powder is sweetened with stevia, but if yours is not sweetened, feel free to add some sweetness to it)
Mix all dry ingredients together: coconut flour, matcha, protein powder.
Add melted coconut oil, vanilla and water to the mixture. Mix well and you will have a mixture resemble the consistency of cookie dough.
Shape the dough into bite-size pieces with your hands.
Optional: Sprinkle some matcha powder to cover the energy balls to prevent them from sticking to each other.
Store in an air-tight container and store up to 5 days.
