Mini Broccoli Omelette Cups

Serves 6

Fuel your morning with this power breakfast on the go style. Every bite of this tasty broccoli omelette cup is going to make sure you have the best morning.

Ingredients

  • 3 tsp chia seed, soaked in

  • ⅓ cup water

  • 1.5 cup broccoli florets

  • 1 tbsp hemp hearts

  • ½ tsp salt

  • ¼ tsp onion powder

  • ¼ tsp garlic powder

  • ⅛ tsp cayenne

  • 4 eggs

  • (Optional) daya cheddar cheese topping

 

Instructions

  1. Soak the chia seeds in 1/3 water for 10min and chop the broccoli

  2. Preheat the oven to 350F and line a muffin tin with 6 liners

  3. Whisk all the ingredients together

  4. Pour the ingredients evenly into the muffin tin

  5. Bake for 20 min until the egg is baked through

Notes

  • If you are making these omelette cups in the morning, you can save time by chopping the broccoli and soaking the chia seeds the night before. Keep them fresh in an air-tight container in the refrigerator for up to a week.
